This Amaretto Cherry Jam combines fresh black cherries with the sweet, nutty flavor of Amaretto almond liqueur, enhanced by vanilla and a touch of lemon juice for balance. Perfect as a spread on toast, a topping for desserts, or a unique gift, this homemade jam offers a luscious, slightly boozy twist on a classic cherry preserve.

Ingredients

Scale

Fruits and Flavorings

  • 3 1/2 cups pitted black cherries
  • 8 teaspoons lemon juice
  • 1 teaspoon vanilla extract or paste
  • 4 teaspoons Amaretto almond liqueur

Sugar and Additives

  • 2 cups granulated sugar
  • 1 teaspoon butter (optional, helps reduce foaming)

Instructions

  1. Prepare the cherries: Rinse and pit 3 1/2 cups of fresh black cherries. Chop them roughly or leave them halved if you prefer a chunkier texture in your jam.
  2. Combine ingredients: In a large saucepan, combine the cherries, sugar, and lemon juice. Stir gently to mix everything evenly.
  3. Mash and mix: Use a potato masher or fork to lightly mash the cherries, helping to release their juices and dissolve the sugar more quickly, providing a juicy base for the jam.
  4. Heat things up: Place the pan over medium heat and stir continuously until the sugar has fully dissolved and the mixture releases more juices.
  5. Simmer with care: Bring the mixture to a gentle simmer, stirring frequently to prevent sticking or burning. Skim off any foam that forms using a spoon. Add butter if using to reduce foam.
  6. Add the flavor: After simmering for 15-20 minutes and once the jam has thickened slightly, stir in the vanilla extract and Amaretto. Continue cooking for another 2-3 minutes to blend the flavors.
  7. Check for setting point: Test the jam’s readiness by placing a small spoonful on a chilled plate. Wait one minute and run your finger through it; if it leaves a clear line without running, the jam is set. If not, simmer for an additional 2-3 minutes and test again.
  8. Jar and store: Pour the hot jam into sterilized jars, seal them tightly, and allow to cool to room temperature before refrigerating. Store chilled and consume within a few weeks for best flavor.

Notes

  • Use fresh, ripe black cherries for the best flavor and natural sweetness.
  • The butter is optional but helps prevent foaming during simmering, making it easier to stir.
  • Amaretto adds a subtle almond note—ensure it’s fully cooked off by simmering after adding to avoid excessive alcohol.
  • If you prefer a smoother jam, mash the cherries more thoroughly.
  • Properly sterilize jars to ensure the jam keeps well and avoid spoilage.
  • This jam pairs wonderfully with cheese, toast, or desserts like ice cream and cheesecake.
