Instructions

  1. Activate Yeast: In a small bowl or measuring cup, mix lukewarm water with dry yeast. Stir gently and let it sit for 10 minutes until foamy, indicating the yeast is activated.
  2. Prepare Avocado Mixture: Blend the ripe avocado and plain Greek yogurt in a food processor until smooth and creamy, or mash thoroughly with a fork ensuring no lumps remain.
  3. Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour and salt evenly.
  4. Mix Dough: Add the avocado-yogurt blend and activated yeast water to the dry ingredients. Mix with a spatula until a shaggy dough forms, then knead by hand for 3 to 4 minutes until all the flour is fully incorporated and the dough becomes smooth.
  5. First Rise: Lightly grease a mixing bowl with oil. Place the dough ball inside and cover with a towel or plastic wrap. Let it rise at room temperature for 1 to 1 ½ hours until it doubles in size.
  6. Shape Bagels: Divide the risen dough into 6 equal pieces. Shape each piece into a smooth ball, poke a hole through the center, and gently stretch into a ring shape. Optionally, let shaped bagels rest for 15–20 minutes before boiling.
  7. Preheat Oven and Prepare Boiling Water: Set oven to 400°F (205°C). Bring a large pot of water to a boil and add the maple syrup.
  8. Boil Bagels: Carefully boil each bagel in the maple syrup water for 45 to 60 seconds on each side to develop a chewy crust. Remove with a slotted spoon and place on a wire rack to drain.
