Ingredients

Scale

Main Ingredients

  • 1 1/2 cups cooked rice (preferably day-old)
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • 1/2 cup diced carrots
  • 1/3 cup green peas
  • 2 cloves garlic, minced
  • 2 green onions, sliced (for garnish)
  • 2 to 3 tablespoons soy sauce
  • 1 tablespoon oil (plus more as needed)

Bang Bang Sauce

  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon rice vinegar

Instructions

  1. Prepare Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, Sriracha, and rice vinegar. Stir until smooth and well combined. Set this sauce aside for later use.
  2. Cook Chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the diced chicken breast, season with salt and pepper, and cook for 5 to 6 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  3. Scramble Eggs: In the same skillet, pour in the beaten eggs and scramble them gently until just set. Remove the eggs and set aside with the chicken.
  4. Sauté Vegetables: Add a little more oil if needed, then sauté diced carrots and minced garlic in the skillet for 2 to 3 minutes or until the carrots soften. Stir in the green peas and cook for an additional minute.
  5. Fry Rice: Add the cold cooked rice to the pan. Stir-fry for 3 to 4 minutes on high heat, breaking up any clumps and allowing the rice to crisp slightly.
  6. Combine Ingredients: Return the cooked chicken and scrambled eggs to the skillet with the rice. Stir everything together thoroughly. Pour in the soy sauce and mix evenly to ensure balanced seasoning.
  7. Add Bang Bang Sauce: Pour the prepared bang bang sauce over the rice mixture. Stir well until the entire dish is coated with the sauce and heated through.
  8. Garnish and Serve: Remove the pan from heat, garnish the fried rice with sliced green onions, and serve hot immediately for the best flavor and texture.

Notes

  • Using day-old cooked rice helps to achieve a better fried rice texture by preventing it from becoming mushy.
  • Adjust the amount of Sriracha in the bang bang sauce to control the heat level according to your taste.
  • Feel free to substitute chicken with shrimp, tofu, or other proteins for variation.
  • Adding more vegetables like bell peppers or corn can enhance the nutritional value and color of the dish.
  • Ensure the pan or wok is hot before adding ingredients to achieve proper stir-frying and crisp texture.
