Instructions

  1. Prepare the chicken: Pat the chicken breasts dry and cut them in half horizontally if they are thick to ensure even cooking. Mix the dried oregano, dried tarragon, and salt in a small bowl and sprinkle the seasoning evenly over both sides of the chicken breasts.
  2. Cook the chicken: Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 8-10 minutes on each side, until the internal temperature reaches 165°F (74°C). Remove from heat and let the chicken rest for a few minutes before cutting into bite-sized pieces.
  3. Preheat the oven: Set your oven to 375°F (190°C). Place the flatbreads on a large baking sheet for assembling the flatbread pizzas.
  4. Assemble the flatbreads: Brush each flatbread generously with barbecue sauce, then sprinkle the minced garlic evenly over the sauce. Layer the flatbreads first with shredded mozzarella, then evenly distribute the cooked chicken pieces, chopped red bell pepper, and sliced red onion.
