Instructions

  1. Prepare Baking Sheets and Bags: Place parchment paper on two rimmed baking sheets and set aside. Evenly divide powdered sugar, cinnamon, and Biscoff cookies into two gallon-sized zipper-top bags (1 ¼ cups powdered sugar, ¼ teaspoon cinnamon, and ¾ cup cookie pieces per bag). Shake each bag to mix and set aside.
  2. Melt Chocolate Mixture: In a microwave-safe bowl, combine white chocolate chips, cookie butter, and salted butter. Microwave in 15-second intervals, stirring well between each, until mixture is fully melted and smooth but not overheated. Stir in vanilla extract until combined.
  3. Coat the Cereal: Place the cereal into a very large mixing bowl. Pour the melted chocolate mixture over the cereal. Gently fold the cereal from the bottom using a rubber spatula to coat it evenly without crushing the cereal pieces.
