Ingredients

Scale

For the Blackberry Jam:

  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar

For the Pastry:

  • 2 sheets puff pastry
  • 8 ounces goat cheese
  • 2 lemons, zested
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg (for egg wash)

Instructions

  1. Make the blackberry jam: In a saucepan, combine the blackberries, water, lemon juice, and sugar. Cook over medium heat for 20-30 minutes, stirring occasionally, until the mixture thickens. Lightly mash the berries with a spoon and set aside to cool to room temperature.
  2. Prepare the puff pastry: Thaw the puff pastry sheets on the counter for 20-25 minutes until pliable. On a lightly floured surface, roll each sheet out into a rectangle.
  3. Assemble the twists: Spread half of the goat cheese evenly over each pastry rectangle. Spoon the cooled blackberry jam over the goat cheese.
  4. Cut and twist the dough: Cut each sheet of dough into 12 strips. Fold each strip in half lengthwise, gently twisting each while stretching slightly to create a spiral effect. Repeat for the second sheet.
  5. Apply egg wash and sugar topping: Whisk the egg in a small bowl. Brush the twists with the egg wash then sprinkle with a mixture of lemon zest, raw sugar, and minced thyme.
  6. Bake: Place the twists on a baking sheet lined with parchment paper. Bake in a preheated oven at 400°F (204°C) for 16-18 minutes or until golden brown and puffed.
  7. Cool and serve: Remove from the oven and allow to cool before serving to let flavors set and the pastry crisp up.

Notes

  • Ensure puff pastry is thawed but still cold to prevent sticking and tearing.
  • Make the jam a day ahead to allow flavors to develop for a more intense taste.
  • Use fresh thyme for the best aromatic flavor; dried thyme may be too overpowering when raw.
  • These twists can be frozen before baking—freeze on a tray, then transfer to a bag, bake straight from frozen adding a couple of extra minutes to the baking time.
  • For a dairy-free version, substitute goat cheese with a vegan cream cheese alternative.
