Chicken and Vegetables
- 1 lb chicken breast, diced
- 1 cup spinach
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- Fresh parsley for garnish (optional)
Pasta and Sauce
- 8 oz pasta (penne or fusilli works well)
- 8 oz Boursin cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook following the package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set aside.
- Prepare the Chicken: Heat olive oil in a large skillet over medium heat. Season the diced chicken breast with salt and pepper. Add the chicken to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Make the Sauce: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Add the halved cherry tomatoes and stir. Then incorporate the Boursin cheese, stirring continuously until it melts and the sauce is smooth and well combined.
- Combine Ingredients: Return the cooked chicken to the skillet. Add the cooked pasta and toss everything together to coat well in the sauce. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is reached.
- Serve: Plate the creamy chicken pasta mixture. Garnish with fresh parsley if desired and serve warm for a comforting meal.
