Ingredients

Scale

Chicken and Marinade

  • 2 chicken breasts cut in half lengthwise
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp salt
  • 1 cup buffalo sauce
  • 1 ½ tbsp Greek yogurt

Toppings and Assembly

  • 2 tbsp ranch dressing for drizzling
  • 8 taco sized flour tortillas, warmed
  • 2 tbsp chopped green onions
  • 2 tbsp chopped cilantro
  • ½ cup crumbled blue cheese
  • ½ small purple onion, thinly sliced

Instructions

  1. Season the chicken: Season both sides of the chicken breasts with garlic powder, onion powder, paprika, and salt, gently pressing the spices into the meat to ensure even flavor.
  2. Cook the chicken: Heat olive oil in a large cast iron skillet over medium-high heat. Add chicken and cook for 4–5 minutes per side, or until cooked through and internal temperature reaches 165°F. Cook in batches if necessary to avoid overcrowding the pan.
  3. Rest and shred the chicken: Remove chicken from skillet and let rest for about 5 minutes to retain juices. Then shred the meat finely using two forks.
  4. Mix buffalo sauce and chicken: In a medium bowl, whisk together buffalo sauce and Greek yogurt until smooth. Add shredded chicken and toss to coat evenly with the sauce mixture.
  5. Assemble the tacos: Place the buffalo chicken onto warmed flour tortillas. Drizzle with ranch dressing, then top with chopped green onions, cilantro, crumbled blue cheese, and thinly sliced purple onion for extra flavor and texture.

Notes

  • Make sure to not overcook the chicken to keep it juicy and tender.
  • You can substitute flour tortillas with corn tortillas for a gluten-free option.
  • Adjust the amount of buffalo sauce depending on your spice preference.
  • Greek yogurt balances the heat while adding creaminess, but sour cream can be used as a substitute.
  • These tacos pair well with a crisp side salad or crunchy slaw for added freshness.
