Ingredients

Scale

Cherry Tomato Confit

  • 2 cups cherry tomatoes, halved
  • ⅓ cup olive oil
  • 3 garlic cloves, thinly sliced
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Sandwich Base and Filling

  • 8 slices artisan bread (ciabatta, sourdough, or baguette)
  • 8 ounces burrata cheese (2 balls or 1 large ball)
  • 1 cup fresh basil leaves
  • 4 tablespoons balsamic glaze
  • Olive oil or softened butter, for toasting
  • 4 slices prosciutto
  • 1 cup arugula
  • 2 tablespoons pesto

Instructions

  1. Prepare the Cherry Tomato Confit: Preheat your oven to 300°F (150°C). Spread the halved cherry tomatoes in a single layer in an oven-safe dish. Drizzle them with olive oil and sprinkle with thinly sliced garlic, dried oregano, crushed red pepper flakes if using, salt, and black pepper.
  2. Roast the Tomatoes: Place the dish in the preheated oven and roast for 25–30 minutes until the tomatoes become soft, slightly shriveled, and caramelized. Remove from the oven and set aside to cool slightly.
  3. Toast the Bread: Lightly brush each slice of artisan bread with olive oil or spread with softened butter. Heat a skillet or grill pan over medium heat and toast the bread slices until golden brown and crispy, about 2–3 minutes per side.
  4. Assemble the Sandwiches: Spread the cherry tomato confit evenly over four slices of toasted bread. Tear the burrata cheese gently and distribute it over the tomatoes. Layer fresh basil leaves generously on top of the burrata, then drizzle with balsamic glaze to add sweetness and tang.
  5. Add Optional Ingredients: For extra flavor and texture, add slices of prosciutto, a handful of fresh arugula, and a smear of pesto on the sandwiches if desired.
  6. Finish and Serve: Close the sandwiches with the remaining toasted bread slices. Slice each sandwich in half for easier handling and serve immediately for maximum freshness and flavor.

Notes

  • Cherry tomato confit can be made ahead and stored in the refrigerator for up to 3 days.
  • Use fresh burrata cheese to ensure the best creamy texture and flavor.
  • To keep sandwiches from getting soggy, toast the bread well and add wet ingredients just before serving.
  • For a vegetarian version, omit the prosciutto or substitute with grilled vegetables.
  • The balsamic glaze adds a sweet and tangy contrast – if unavailable, reduce balsamic vinegar with a bit of honey until syrupy.
