Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 200°F (93°C) and line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Make Toffee Mixture: In a medium saucepan over medium heat, combine the butter, brown sugar, and corn syrup. Bring the mixture to a boil, then allow it to boil gently for 2–3 minutes without stirring to develop the toffee flavor. Remove from heat.
  3. Add Flavor and Leavening: Stir in the vanilla extract and baking soda carefully. The mixture will bubble and foam slightly, creating a lighter texture for the toffee coating.
  4. Coat Pretzels: Place the pretzel snaps into a large mixing bowl. Pour the warm toffee mixture over them and stir thoroughly until all pretzels are evenly coated with the sticky toffee.
  5. Add Toffee Bits: Add the Heath bits to the coated pretzels and gently mix to incorporate the crunchy toffee pieces throughout the snack.
  6. Bake the Mixture: Spread the pretzels in a single even layer on the prepared baking sheet. Bake in the preheated oven for 45 minutes, stirring once halfway through baking to ensure even coating and crispiness.
  7. Add Peanuts: Remove the baking sheet from the oven and immediately sprinkle the chopped roasted peanuts over the warm pretzels. Gently toss to distribute the peanuts evenly.
  8. Cool and Store: Allow the pretzels to cool completely on the baking sheet, so the toffee hardens and the snack firms up. Once cooled, break into bite-sized pieces and store in an airtight container to maintain freshness.
