Lobster & Sauce

  • 1 cup fresh lobster meat, cooked
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare Ingredients: Finely chop the garlic cloves and fresh parsley to get them ready for the sauce and garnish.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or fettuccine and cook until al dente according to package instructions. Before draining, reserve 1 cup of pasta cooking water for adjusting the sauce consistency.
  3. Sauté Garlic: In a skillet over medium heat, melt the unsalted butter until it becomes bubbly. Add the minced garlic and sauté for about 1 minute until fragrant, taking care not to burn it.
  4. Add Cream & Cheese: Slowly stir in the heavy cream while mixing to create a smooth sauce. Add the grated Parmesan cheese to the skillet and continue stirring until the cheese melts into the sauce and it becomes creamy. Use the reserved pasta water as needed to thin the sauce to your desired consistency.
  5. Incorporate Lobster: Gently fold in the cooked lobster meat into the cream sauce, then squeeze in the juice of one lemon. Warm the mixture on low heat for a couple of minutes to infuse flavors, ensuring not to overcook the lobster.
  6. Combine Pasta & Serve: Toss the drained pasta into the skillet with the sauce, coating all strands evenly. Taste and season with salt and pepper as desired. Garnish with chopped fresh parsley and serve immediately while hot.
