  • 8 oz. mushrooms, roughly chopped
  • 1 14.5 oz can diced tomatoes, drained

  • 1 lb. 96/4 ground beef
  • 4 oz. reduced-fat cream cheese (112g), softened
  • 1 cup shredded cheddar cheese (112g), divided

  • 1 Tbsp steak seasoning
  • 1/4 tsp salt

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C). Spray a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Sauté Vegetables: Spray a skillet with cooking spray and cook the diced onions and chopped mushrooms over medium heat for about 4-5 minutes until tender. Drain any excess liquid and transfer the veggies to a large mixing bowl.
  3. Cook Ground Beef: In the same skillet, add the ground beef and cook over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
  4. Combine Ingredients: Add the cooked beef to the bowl with the veggies. Stir in the drained diced tomatoes, softened cream cheese, half (1/2 cup) of the shredded cheddar cheese, salt, and steak seasoning. Mix thoroughly to combine all ingredients evenly.
  5. Assemble Casserole: Transfer the mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top.
  6. Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
