Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • ¼ cup quick cooking oats
  • ¼ cup finely chopped sweetened coconut
  • ¼ cup finely chopped walnuts
  • 1¼ cups confectioners’ sugar, divided
  • 1 pinch salt

Wet Ingredients

  • ½ cup butter, softened
  • 15 maraschino cherries, finely chopped

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Cream Butter and Sugar: In a mixing bowl, beat ¼ cup of confectioners’ sugar with the softened butter using an electric mixer until completely smooth to create a creamy base.
  3. Add Dry Ingredients: Gradually add the flour to the butter mixture and beat for about 5 seconds to incorporate. Follow by adding oats, coconut, walnuts, and salt in separate additions, beating each for about 5 seconds to combine well.
  4. Incorporate Cherries: Fold in the finely chopped maraschino cherries into the mixture. Beat the dough for about 25 seconds until it comes together as a light pink dough, evenly distributed with cherries.
  5. Portion Dough: Using a spoon, drop dollops of dough onto the prepared baking sheet spacing them about 2 inches apart to allow for spread during baking.
  6. Bake Cookies: Place the baking sheet in the preheated oven and bake the cookies for approximately 18 minutes, or until the edges turn slightly golden.
  7. Coat with Sugar: While the cookies are still warm, pour the remaining 1 cup of confectioners’ sugar into a shallow dish. Roll each cookie in the sugar once, then again to ensure a thick, sweet coating.

Notes

  • Ensure the butter is softened to room temperature for easier mixing and smoother dough.
  • Finely chop the maraschino cherries to distribute evenly and achieve the characteristic pink tint.
  • Chilling the dough briefly before baking can help maintain the cookie shape better.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • If you prefer, substitute walnuts with pecans or almonds for a different nutty flavor.
