Ingredients

Scale

Lasagna and Sauce

  • 12 lasagna noodles
  • 3 cups Alfredo sauce

Filling

  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese (divided into 1 cup and 1 cup)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Noodles: Bring a large pot of salted water to a boil. Cook the lasagna noodles until al dente, about 8-10 minutes. Drain carefully and lay them flat on a clean towel to prevent sticking and allow them to cool.
  2. Mix the Filling: In a large mixing bowl, combine the shredded cooked chicken, ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix thoroughly until all ingredients are evenly distributed.
  3. Assemble the Rolls: Spread a thin layer of Alfredo sauce evenly over the bottom of a 9×13-inch baking dish. Take one lasagna noodle at a time, spread approximately 1/4 cup of the chicken and cheese filling evenly over each noodle, then roll it up tightly and place the roll seam-side down in the prepared baking dish.
  4. Top with Sauce and Cheese: Once all rolls are arranged in the dish, pour the remaining Alfredo sauce evenly over the top. Sprinkle the remaining 1 cup of shredded mozzarella cheese over the sauce to create a golden, bubbly topping.
  5. Bake: Preheat your oven to 375°F (190°C). Cover the baking dish with aluminum foil to keep moisture in and bake for 25 minutes. Then remove the foil and bake for another 15-20 minutes until the cheese is melted, golden, and the sauce is bubbling.
  6. Garnish and Serve: Remove from oven and let the lasagna rolls cool for about 5 minutes. Garnish with freshly chopped parsley to add color and a fresh flavor. Serve warm and enjoy your creamy, cheesy Chicken Alfredo Lasagna Rolls.

Notes

  • For best results, use freshly cooked chicken or leftover roasted chicken.
  • Make sure the noodles are fully drained and cooled to prevent them from breaking when rolling.
  • You can prepare this dish in advance by assembling the rolls and refrigerating before baking.
  • For a lighter version, substitute part-skim ricotta and mozzarella cheese.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
