  • 1/2 teaspoon Italian seasoning
  • 1/2 cup pasta cooking water (as needed)
  • Kosher salt and fresh cracked black pepper to taste
  • 12 ounces pasta of choice

Instructions

  1. Blend the Cheese and Milk: Combine the milk and cottage cheese in a high speed blender and blend until completely smooth, ensuring a creamy sauce base.
  2. Sauté Garlic: Heat olive oil in a medium saucepan over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant, careful not to brown it.
  3. Add Cheese Mixture: Lower the heat to low and pour the blended cottage cheese mixture into the saucepan along with parmesan cheese and Italian seasoning. Stir gently to combine.
  4. Melt Cheese Gently: Cook the mixture on very low heat, stirring frequently to melt the parmesan cheese smoothly. Avoid overheating to prevent curdling.
  5. Cook Pasta: Prepare pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining the pasta. Rinse pasta with cool water to stop cooking.
  6. Toss Pasta with Sauce: Add the pasta back to the saucepan with the Alfredo sauce over low heat. Toss to coat the noodles evenly, adding reserved pasta water as needed to loosen the sauce. Heat gently to desired temperature without overheating.
