Scale

Main Ingredients

  • 2 whole heads of garlic, peeled
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 tablespoons butter
  • 6 cups chicken or vegetable broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper, to taste

Finishing Ingredients

  • 4 egg yolks
  • 1/2 cup grated Parmesan cheese
  • Crusty bread, for serving
  • Fresh parsley (optional for garnish)

Instructions

  1. Heat fats: In a large pot over medium heat, warm the olive oil and butter together until melted and combined.
  2. Sauté onion: Add the chopped onion and sauté for about 5 minutes until it becomes soft and translucent, stirring occasionally.
  3. Cook garlic: Add the peeled garlic cloves and cook for 2 to 3 minutes, stirring frequently to prevent burning and to release their flavor.
  4. Add broth and herbs: Pour in the chicken or vegetable broth and add the fresh thyme sprigs and bay leaves. Bring to a boil, then reduce the heat to low and let the soup simmer gently for 30 minutes to fully infuse the flavors.
  5. Remove herbs and season: Take out the thyme sprigs and bay leaves, then season the soup with salt and pepper to taste.
  6. Prepare egg and cheese mixture: In a small bowl, whisk together the egg yolks and grated Parmesan cheese until smooth.
  7. Temper the mixture: Slowly ladle some of the hot soup into the egg and cheese mixture while whisking constantly to gradually raise the temperature and prevent curdling.
  8. Incorporate tempered mixture: Gradually whisk the tempered egg mixture back into the pot of soup, stirring continuously.
  9. Simmer and thicken: Allow the soup to simmer gently for another 5 minutes, stirring constantly until it slightly thickens and attains a creamy texture.
  10. Serve: Ladle the hot soup into bowls, serve with crusty bread on the side, and optionally garnish with fresh parsley for a burst of color and freshness.

Notes

  • Tempering the egg yolks is crucial to avoid scrambling them when adding to the hot soup.
  • Use vegetable broth to make this recipe vegetarian-friendly.
  • For more intense garlic flavor, roast the garlic heads beforehand.
  • Serve immediately for best texture; reheating may cause the egg mixture to curdle.
  • Crusty French baguette is ideal for dipping.
