Ingredients

Scale

Chicken

  • 4 boneless skinless chicken breasts, thinly sliced or cut in half
  • Salt and pepper, to season
  • 2 tablespoons olive oil, divided

Sauce

  • 1 1/2 cups sliced mushrooms
  • 1/2 cup Marsala wine or substitute
  • 1/2 cup chicken broth
  • 1 cup heavy whipping cream
  • 1 teaspoon ground mustard
  • 1 teaspoon garlic powder

Garnish

  • Fresh parsley, chopped

Instructions

  1. Prepare and cook chicken: In a large skillet over medium heat, add 1 tablespoon of olive oil. Lightly season the chicken breasts with salt and pepper. Add chicken to the skillet and cook until lightly browned and cooked through, about 4-5 minutes per side depending on thickness. Remove the chicken from the pan and set aside on a plate.
  2. Sauté mushrooms and deglaze: Add remaining 1 tablespoon olive oil to the skillet. Add the sliced mushrooms and sauté for 1-2 minutes until they begin to soften. Pour in the Marsala wine and bring to a boil over medium-high heat, allowing it to cook for 1-2 minutes to burn off the alcohol and concentrate flavors.
  3. Make cream sauce: Add the chicken broth, heavy whipping cream, ground mustard, and garlic powder to the skillet. Bring the mixture to a boil, then reduce heat and let it simmer for about 10 minutes, stirring occasionally, until the sauce thickens slightly.
  4. Combine chicken with sauce: Return the cooked chicken breasts to the skillet, nestling them in the sauce. Simmer together for 1-2 minutes to allow the chicken to reheat and absorb the flavors.
  5. Garnish and serve: Sprinkle freshly chopped parsley on top for a fresh finish. Serve the creamy chicken Marsala immediately with your favorite sides.

Notes

  • For a gluten-free version, ensure the chicken broth and mustard are gluten-free and use a gluten-free Marsala substitute.
  • You can substitute heavy cream with half-and-half for a lighter version, though the sauce will be less rich.
  • Marsala wine can be replaced with dry sherry or a dry white wine if unavailable.
  • Serve with mashed potatoes, pasta, or steamed vegetables to complement the creamy sauce.
  • Make sure to slice chicken thinly or butterfly it for faster, even cooking.
