Ingredients

Scale

Bread and Butter

  • 6 slices of rustic bread, such as sourdough or baguette
  • 2 tablespoons of butter or alternatively olive oil

Garlic and Mushroom Topping

  • 2 cloves of garlic, finely chopped
  • 200g mushrooms, sliced thinly
  • 100g grated cheese (Gruyère, Cheddar, or Mozzarella)
  • 1 teaspoon fresh or dried thyme leaves
  • ½ teaspoon salt & pepper, to taste
  • 1 tablespoon freshly chopped parsley, for garnish

Instructions

  1. Preparing the bread: Choose 6 slices of rustic bread such as sourdough or baguette. Toast the slices over medium-high heat until crisp and golden brown, taking care not to burn them so they retain their crunchy texture and rich flavor.
  2. Prepare garlic: Heat 2 tablespoons of butter or olive oil in a pan over low heat. Add the finely chopped garlic cloves and toast until fragrant and lightly golden, forming an aromatic base for the topping.
  3. Sauté the mushrooms: Increase the heat to medium and add the thinly sliced mushrooms. Cook until they are golden brown and their moisture has evaporated. The mushrooms should be soft and juicy with a slight bite to enhance their umami flavor.
  4. Prepare cheese melt: Reduce the heat and sprinkle 100 grams of grated cheese evenly over the mushrooms. Stir gently until the cheese melts into a creamy mixture, ideally using Gruyère for nuttiness or Cheddar for tang.
  5. Seasoning: Add 1 teaspoon of thyme leaves along with ½ teaspoon of salt and pepper. Let the mixture simmer briefly to infuse earthy and spicy notes from the thyme and seasoning.
  6. Serve: Spread the mushroom and cheese mixture generously onto the toasted bread slices. Garnish with freshly chopped parsley for color and a fresh touch. Serve the toasts hot for the best flavor experience.

Notes

  • Use rustic bread like sourdough or baguette for best texture and flavor.
  • Adjust the seasoning with salt and pepper according to taste preference.
  • Butter will give a richer flavor, while olive oil is a lighter alternative.
  • Gruyère cheese gives a nuttier flavor, Cheddar adds tanginess, and Mozzarella can be used for a milder, stretchier melt.
  • Serve immediately to enjoy the toast while crispy and warm.
  • The recipe can be adapted with fresh thyme if available, but dried thyme works well too.
