Instructions

  1. Cook the Rice: Prepare the sushi rice according to the package instructions. Avoid stirring the rice once cooked so it remains sticky and holds together well for assembling the cucumber sushi.
  2. Prepare the Cucumbers: Cut each cucumber in half lengthwise. Using a knife or spoon, carefully hollow out the seeds to create a cavity for the fillings.
  3. Fill Cucumbers: Spoon a small amount of sushi rice into one half of the cucumber, pressing it slightly toward one side. Add smoked salmon, sliced avocado, red bell peppers, and julienned carrots on top of the rice, gently compressing the ingredients as you go to pack the cucumber tightly.
  4. Slice the Sushi: Use a sharp knife to carefully slice the stuffed cucumbers into ½ inch thick pieces to resemble sushi bite-sized rolls.
  5. Serve: Serve immediately or chilled. Optionally, serve with soy sauce or a spicy mayonnaise sauce made by mixing mayonnaise with sriracha for dipping.

  • For a vegetarian version, omit the smoked salmon and add extra vegetables or tofu.
