Ingredients

Scale

Chicken Mixture

  • 23 cups shredded cooked chicken (rotisserie or baked)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream or mayonnaise
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Stuffing Topping

  • 1 box (6 oz) stuffing mix (traditional or cornbread)
  • 2 tablespoons melted butter

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking and for easy cleanup.
  2. Mix the Creamy Base: In a large bowl, combine the shredded cooked chicken, cream of chicken soup, sour cream (or mayonnaise), and chicken broth. Stir the mixture until smooth and well incorporated. Season with salt and pepper to taste.
  3. Layer the Casserole: Spread the chicken mixture evenly into the prepared baking dish ensuring an even layer across the bottom.
  4. Add Stuffing: Prepare the stuffing mix according to the package directions but use slightly less water than recommended to avoid sogginess. Spoon the prepared stuffing mixture over the chicken layer evenly.
  5. Drizzle Butter: Pour the melted butter over the top of the stuffing layer to help create a golden and crispy crust as it bakes.
  6. Bake: Place the casserole uncovered into the preheated oven and bake for 35 to 40 minutes or until the top is golden brown and the edges are bubbling.
  7. Cool and Serve: Remove from the oven and let the casserole cool for a few minutes before serving to allow it to set and make serving easier.

Notes

  • You can substitute sour cream with mayonnaise for a slightly different flavor and creaminess.
  • Using less water than package instructions for the stuffing prevents it from getting soggy after baking.
  • Leftover rotisserie chicken works perfectly to save prep time.
  • For added veggies, consider mixing in cooked green beans or peas with the chicken mixture.
  • If you prefer a crispier top, broil the casserole for 2-3 minutes at the end of baking, watching closely to avoid burning.
