Truffle Mixture
- 90 ml (⅓ cup + 2 tsp) thickened or whipping cream
- 200 g (7 oz) dark cooking chocolate (40% cocoa solids), finely chopped
- 1 tablespoon instant coffee granules
Coating
- 125 g (4.5 oz) milk cooking chocolate
- Prepare Dish and Tray: Line a small, flat dish (about 13 x 18 cm or 7 x 5 inches) with non-stick baking paper. Separately, line a baking tray with non-stick baking paper and set aside.
- Heat Cream: Pour the cream into a small saucepan and gently heat it over low heat until it is just below boiling point, stirring occasionally to prevent scorching.
- Add Chocolate and Coffee: Turn off the heat, then add the finely chopped dark cooking chocolate and instant coffee granules to the warm cream. Stir continuously until all the chocolate has melted and the mixture is completely smooth and glossy.
- Chill Mixture: Pour the chocolate coffee mixture into the prepared dish and transfer it to the fridge. Chill for about 2 hours, or until it firms up enough to be rolled into balls.
- Shape Truffles: Using a small ice cream scoop or teaspoon, portion out about 3 level teaspoons of the mixture and roll into compact small balls. If the mixture is too firm, leave it at room temperature for 5-10 minutes to soften. Place each ball on the lined tray and refrigerate for at least 30 minutes to firm up. Keep your hands cool by using an ice pack or frozen peas, and keep paper towels nearby to dry your hands as needed.
- Melt Milk Chocolate for Coating: Break the milk cooking chocolate into even pieces and place in a heatproof bowl. Set the bowl over a pan of barely simmering water, making sure no water touches the chocolate. Stir occasionally until almost melted, remove from heat and let sit for about 15 minutes to completely melt with residual heat, cooling slightly to prevent truffle softening during coating.
- Coat Truffles: Remove the truffles from the fridge. Dip each ball individually into the melted milk chocolate, using two small forks to submerge and turn to coat completely. Lift the truffles out, remove excess chocolate by gently smoothing on the edge of the bowl, and return to the lined tray. If chocolate firms up too much, gently reheat and continue coating.
- Set Coating: Once all truffles are coated, place the tray back in the fridge for about 30 minutes until the milk chocolate coating is crisp and set.
- Optional Decoration: Reheat any remaining chocolate and drizzle over the truffles for an elegant finishing touch.
- Storage: Store the truffles in an airtight container in the refrigerator for up to one week. If stacking, separate layers with non-stick baking paper to prevent sticking.
Notes
- The thickened/whipping cream provides richness and smooth texture to the truffle mixture.
- Dark cooking chocolate with 40% cocoa solids balances bitterness and sweetness well for truffles.
- Instant coffee granules infuse a deep coffee flavor without altering texture.
- Keeping hands cool while rolling the truffles prevents melting and ensures neat shapes.
- The gentle melting of chocolate over simmering water (bain-marie) avoids burning and keeps chocolate smooth.
- Allowing the melted coating chocolate to cool slightly before dipping prevents the truffles from melting.
- Store truffles properly to maintain freshness and prevent sticking.
