Ingredients

Scale

Base

  • 4 cups shredded cooked chicken (preferably rotisserie chicken)
  • 1 cup shredded cheddar or Monterey Jack cheese

Sauce

  • 1 cup cottage cheese (good culture or Daisy 2% or whole milk)
  • ½ cup Greek yogurt (2% or whole milk)
  • ½ cup buffalo sauce (plus more to taste, e.g., Frank’s or Primal Kitchen)
  • ¼ cup ranch dressing (Primal Kitchen recommended)
  • Salt and pepper to taste

Toppings

  • 1 cup shredded cheddar or Monterey Jack cheese
  • 2 tbsp green onion, chopped
  • Extra buffalo sauce, ranch dressing, and feta cheese crumbles for garnish

Instructions

  1. Mix Chicken and Cheese: In a large bowl, combine the shredded cooked chicken with 1 cup of shredded cheddar or Monterey Jack cheese. Set this mixture aside while you prepare the sauce.
  2. Blend the Sauce: In a blender or food processor, blend together the cottage cheese, Greek yogurt, buffalo sauce, and ranch dressing until the mixture is smooth and creamy. This combination creates a flavorful and creamy buffalo sauce base.
  3. Combine Sauce and Chicken: Pour the blended buffalo sauce over the chicken and cheese mixture. Stir thoroughly to coat all the chicken evenly with the sauce. Taste the mixture and adjust the amount of buffalo sauce, salt, or pepper as desired.
  4. Transfer to Baking Dish: Pour the combined mixture into an oven-safe baking dish such as a cast iron skillet or casserole dish. Spread it evenly and then top with the additional 1 cup of shredded cheese.
  5. Bake the Dip: Place the dish in a preheated oven at 375°F (190°C) and bake for 18–22 minutes, or until the dip is hot and bubbly, and the cheese on top is melted and slightly golden.
  6. Add Final Toppings and Serve: Remove from the oven and drizzle with extra buffalo sauce and ranch dressing. Sprinkle the chopped green onions and feta cheese crumbles on top. Serve the dip warm alongside tortilla chips, veggie sticks, or pretzels for dipping.

Notes

  • Using rotisserie chicken saves time and adds extra flavor, but cooked shredded chicken breast works well too.
  • Adjust buffalo sauce amount to control the spiciness level.
  • You can substitute ranch dressing with blue cheese dressing if preferred.
  • This dip can be made ahead and refrigerated; simply bake before serving.
  • For a thicker dip, drain excess liquid from the cottage cheese before blending.
  • Serve with a variety of dippers like celery sticks, crackers, or pita chips for more options.
