  • 1 cup dark chocolate chips

  • 1 tsp flaky sea salt (Maldon brand recommended), to taste

Instructions

  1. Prepare the Dates. Line a baking sheet with parchment paper to make clean-up easier. Carefully slice each date in half lengthwise and remove pits if necessary. Arrange the dates slit side up closely together on the baking sheet.
  2. Smash the Dates. Using the bottom of a glass sprayed lightly with cooking spray to prevent sticking, press down gently on the dates to flatten and mash them together as much as possible.
  3. Spread the Peanut Butter Layer. Microwave the peanut butter for 20-30 seconds to soften. Then evenly spread a layer of peanut butter over the smashed dates using a spatula, smoothing it out gently.
  4. Melt the Chocolate. In a microwave-safe bowl, combine the dark chocolate chips and avocado oil. Microwave in 30-second intervals, stirring after each, until fully melted and smooth.
  5. Assemble and Chill. Pour the melted chocolate over the peanut butter layer and smooth it out with the spatula. Sprinkle the chopped peanuts and flaky sea salt evenly over the chocolate. Refrigerate or freeze the entire baking sheet for at least 30 minutes to let the bars set.
  6. Slice and Serve. Once set, cut the bars into evenly sized pieces. For best taste and texture, store them in the fridge or freezer and allow to thaw at room temperature for about 10 minutes before serving.
