For the Coating

  • 60 grams (2 oz) white chocolate, chopped (for drizzling, optional)
  • 2 tablespoons crushed gingersnap cookies or extra nutmeg (for topping, optional)

Instructions

  1. Melt the White Chocolate: Gently melt the white chocolate using a double boiler or microwave in 15-second intervals, stirring until smooth. Let it cool slightly to maintain a smooth but not hot consistency.
  2. Combine with Cream Cheese: Stir the softened cream cheese until smooth in a mixing bowl. Add the cooled white chocolate and mix thoroughly until the mixture is silky and uniform.
  3. Add Eggnog and Flavorings: Gradually mix in the eggnog to avoid separation. Stir in vanilla extract, ground nutmeg, cinnamon, and salt. If desired, add bourbon or dark rum. The resulting mixture should be thick and spoonable, resembling frosting.
  4. Chill the Filling: Cover the bowl and refrigerate for at least 4 hours or overnight until firm enough to scoop.
  5. Shape into Balls: Use a cookie scoop or spoon to portion the chilled filling into 1-inch balls. Roll gently in your hands to smooth the surface, place on a parchment-lined tray, and chill again for about 30 minutes to firm up.
