Pears and Toppings

  • 2 1/2 oz Danish blue cheese, crumbled

  • 3 sprigs fresh thyme, leaves removed from the stem
  • Flaky salt, for garnish

Honey Glaze

  • 12 tbsp honey
  • 1/2 tsp Aleppo pepper

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to get it ready for roasting the pears, which helps deepen their natural sweetness.
  2. Prepare the pears: Slice the pears in half lengthwise and carefully remove the core and seeds from each half. Place the pears cut side down in a cast iron skillet or baking dish. Drizzle the olive oil over them and season lightly with salt and black pepper.
  3. Bake cut side down: Put the skillet or dish in the preheated oven and bake the pears cut side down for 15 minutes. This softens them while caramelizing the exposed sides.
  4. Stuff the pears: Remove the pears from the oven and turn them cut side up. Evenly stuff the cavity of each pear half with crumbled blue cheese, chopped walnuts, and fresh thyme leaves.
  5. Bake again: Return the stuffed pears to the oven and bake for an additional 8 to 10 minutes, until the blue cheese has softened and begun to melt.
  6. Prepare honey-Aleppo glaze: While the pears bake, mix the honey with Aleppo pepper in a small bowl to create a sweet and mildly spicy drizzle.
  7. Serve and garnish: When the pears are done, transfer them to a serving platter. Drizzle the honey and Aleppo pepper glaze over the top, sprinkle with flaky salt and extra thyme if desired, then enjoy immediately.
