Mashed Potatoes

  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream

  • 3 tablespoons chives, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for slow cooking the beef stew.
  2. Sear Beef: In a pan over medium-high heat, melt the butter with olive oil. Toss the top sirloin cubes with salt and pepper, then add them to the hot pan. Brown the beef on all sides for 6-8 minutes to seal in the flavor.
  3. Add Vegetables: Add chopped onions and carrots to the pan and cook together with the beef for 4-5 minutes until the vegetables start to soften.
  4. Coat with Flour: Sprinkle 1 teaspoon of all-purpose flour over the beef and vegetables. Stir well to combine and coat evenly. Cook for another 1-2 minutes to eliminate the raw flour taste.
  5. Add Liquids: Pour in 2 cups of apple cider and 1/2 cup beef broth. Bring the mixture to a boil on the stovetop.
  6. Bake Stew: Transfer the mixture to an oven-safe covered pan or Dutch oven. Cover tightly and cook in the preheated oven for 1 to 1 1/2 hours until beef is tender and flavors meld.
  7. Prepare Potatoes: While the stew cooks, peel and boil 6 large potatoes in salted water until fork-tender, about 15-20 minutes. Drain the potatoes well.
  8. Mash Potatoes: Return the drained potatoes to the pan. Mash them together with 1/4 cup milk, 1/4 cup sour cream, 1 cup shredded sharp cheddar cheese, and 3 tablespoons chopped chives until creamy and smooth. Season with salt and pepper to taste.
  9. Serve: Spoon the hot beef stew over the prepared mashed potatoes and serve immediately for a warm, satisfying fall meal.
