  • 1 tbsp honey or brown sugar
  • 1 tsp sesame oil
  • 12 tsp sriracha or chili garlic sauce (adjust to taste)
  • 1 tsp grated ginger
  • 2 cloves garlic, minced

For the Vegetables:

  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup snap peas
  • 1 small carrot, julienned
  • 3 green onions, chopped
  • 1/2 cup chopped fresh cilantro (optional)

For Cooking:

  • 2 tbsp vegetable oil or canola oil
  • Sesame seeds, for garnish (optional)

Instructions

  1. Prepare the Chicken: In a medium bowl, combine the thinly sliced chicken with soy sauce and cornstarch. Toss well to coat evenly and let marinate for 10-15 minutes to tenderize and enhance flavor.
  2. Mix the Sauce: In a separate bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, sriracha, grated ginger, and minced garlic until well combined. Set aside.
  3. Cook the Chicken: Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add the marinated chicken and stir-fry until cooked through and slightly browned, about 5-6 minutes. Remove the chicken from the wok and set aside.
  4. Stir Fry the Vegetables: Add the remaining 1 tablespoon of oil to the same wok. Add bell peppers, snap peas, carrots, and green onions. Stir fry for 3-4 minutes until vegetables are crisp-tender but still vibrant.
  5. Combine and Simmer: Return the cooked chicken to the wok with the vegetables. Pour in the prepared sauce and toss everything together. Cook for another 2-3 minutes, allowing the sauce to thicken slightly and coat all ingredients evenly.
  6. Finish and Serve: Remove from heat and sprinkle with fresh cilantro and sesame seeds if using. Serve immediately over steamed rice or noodles for a delicious and fiery meal.
