Ingredients

Scale

Firecracker Sauce

  • 1/2 cup buffalo sauce
  • 2 tbsp coconut aminos
  • 3 tbsp coconut sugar
  • 2 tsp rice vinegar
  • 1 tsp ginger powder
  • 2 tsp garlic powder
  • Salt and black pepper to taste (omit pepper for AIP)

Main Ingredients

  • 2 tbsp avocado oil
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • 1 lb ground chicken
  • 2 tbsp green onion (sliced)
  • 3 cups cauliflower rice (cooked or steamed rice)

Instructions

  1. Make the Firecracker Sauce: Combine the buffalo sauce, coconut aminos, coconut sugar, rice vinegar, ginger powder, garlic powder, salt, and black pepper in a bowl. Stir well until the sugar is dissolved and the sauce is well blended. Adjust seasoning to taste.
  2. Sauté Broccoli: Heat avocado oil in a large pan over medium heat. Once the oil shimmers, add the broccoli florets. Sauté for 5-7 minutes until the broccoli is tender but still slightly crisp. Season with salt and pepper, then remove from the pan and set aside.
  3. Cook Ground Chicken: In the same pan, add the ground chicken. Lightly season with salt and pepper. Use a spatula to crumble the chicken and cook until fully browned and cooked through, about 7-10 minutes.
  4. Combine and Coat: Return the cooked broccoli to the pan with the ground chicken. Pour the prepared firecracker sauce over the mixture. Stir continuously until the sauce evenly coats the chicken and broccoli and is heated through.
  5. Serve: Spoon the chicken and broccoli mixture into bowls over a bed of cauliflower rice or steamed rice. Garnish with sliced green onions and serve immediately.

Notes

  • To make this recipe AIP-compliant, omit black pepper from the sauce and seasoning.
  • Use cauliflower rice for a low-carb, grain-free option or steamed white/brown rice as preferred.
  • Coconut sugar adds a natural sweetness; you can reduce the amount if you prefer less sweetness.
  • Adjust the amount of buffalo sauce to control the spiciness level.
  • Avocado oil is chosen for its high smoke point and neutral flavor, but other neutral oils can be substituted.
