Ingredients

Scale

Mashed Potato Mixture

  • 4 cups mashed potatoes (leftover or freshly made)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped green onions
  • 1/4 cup breadcrumbs
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Breading and Frying

  • 1 egg, beaten
  • 1 cup all-purpose flour
  • Vegetable oil for frying (about 2 cups or enough to deep fry)

Instructions

  1. Prepare the potato mixture: In a large bowl, combine the mashed potatoes, shredded cheddar, grated parmesan, chopped green onions, breadcrumbs, garlic powder, salt, and pepper. Stir thoroughly until all ingredients are evenly incorporated to create a cohesive mixture.
  2. Form potato balls: Using your hands, roll the mixture into small balls approximately 1 to 1.5 inches in diameter. Ensure they are compact so they hold shape during frying.
  3. Bread the potato balls: Dip each ball first in all-purpose flour, making sure it is coated evenly. Then dip into the beaten egg, allowing excess to drip off. Finally, roll the ball in breadcrumbs to get a crispy coating.
  4. Heat oil for frying: Pour vegetable oil into a deep fryer or a large skillet to a depth sufficient for deep frying. Heat the oil to 350°F (175°C). Use a thermometer for accuracy to ensure proper frying temperature.
  5. Fry the potato balls: Carefully place a few potato balls into the hot oil, avoiding overcrowding. Fry for 3-4 minutes or until they turn golden brown and crispy on the outside.
  6. Drain and serve: Use a slotted spoon to remove the potato balls from the oil, then place them on paper towels to drain excess oil. Serve immediately with your favorite dipping sauce such as sour cream, ranch, or spicy mayo.

Notes

  • Use leftover mashed potatoes that are not too watery for best results.
  • Adjust the seasoning according to taste, adding more garlic powder or pepper if desired.
  • For a crispier coating, double coat by repeating the egg and breadcrumbs step.
  • Fry in batches to maintain oil temperature and prevent soggy potato balls.
  • Leftover fried mashed potato balls can be reheated in an oven to restore crispiness.
