  • 4 1/2 tablespoons unsalted butter
  • 2 tablespoons minced garlic
  • 3 1/2 cups + 1 tablespoon all-purpose flour
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1 cup whole or 2% milk (warmed to 110°F)
  • 1 large egg (room temperature)

Topping Ingredients

  • 1 beaten egg, for brushing the tops
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh parsley
  • Flaky sea salt (for finishing)

Instructions

  1. Prepare baking pan: Lightly butter the bottom and sides of a 9×13 inch baking pan and set aside.
  2. Make garlic butter for dough: In a small pot, melt the butter and add the minced garlic. Cook for 1-2 minutes until fragrant. Remove from heat and allow to cool while preparing other ingredients.
  3. Mix and knead dough: In a stand mixer bowl, combine flour, parsley, sugar, yeast, and salt. Add warmed milk, egg, and the cooled garlic butter mixture. Knead with the dough hook on low speed for 10-12 minutes until the dough is smooth and slightly tacky. If too sticky, add flour one tablespoon at a time until workable.
  4. Shape rolls and proof: Divide dough into 12 equal portions (about 67 grams each). Shape each into a smooth ball by pinching the bottom seam. Place dough balls into the prepared pan, cover with plastic wrap or a towel, and let rise in a warm spot until doubled in size, about 1-2 hours.
  5. Preheat oven: Heat oven to 350°F (180°C).
  6. Apply egg wash and bake: Brush rolls with beaten egg wash and bake for 20-30 minutes or until the tops turn golden brown.
  7. Prepare garlic butter topping: While rolls bake, melt butter in a pot. Add minced garlic and cook 1-2 minutes until fragrant. Remove from heat and stir in chopped parsley.
  8. Brush baked rolls: As soon as rolls come out of oven, brush generously with garlic butter mixture. Sprinkle flaky sea salt if desired and serve warm.
