Ingredients

Scale

Fats and Oils

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil

Vegetables and Aromatics

  • 2 tsp garlic (minced)
  • 1 ¾ cups whole white mushrooms (washed and dried)
  • ½ tbsp fresh chipped parsley

Dairy

  • ¼ cup cream cheese (cut into small cubes)
  • ½ cup Parmesan cheese
  • ½ cup heavy cream

Spices and Seasonings

  • 1 tbsp Italian seasoning
  • ½ tsp dry ground oregano
  • ½ tsp salt
  • ½ tsp ground black pepper

Instructions

  1. Sauté Mushrooms and Garlic: In a large 12 inch frying pan, combine the butter, olive oil, minced garlic, and whole white mushrooms. Cook over medium-high heat until the mushrooms are tender and have released their juices, about five minutes.
  2. Add Cream Cheese: Reduce the heat to medium and add the cubed cream cheese to the pan. Stir continuously until the cream cheese has melted evenly into the mushrooms, creating a creamy base.
  3. Add Parmesan and Cream: Lower the heat to medium-low. Add in the Parmesan cheese, heavy cream, Italian seasoning, dry oregano, salt, and black pepper. Stir well to combine all ingredients into a smooth sauce.
  4. Simmer the Sauce: Let the mixture simmer gently for five minutes, stirring often to prevent sticking and to allow the flavors to meld and the sauce to thicken.
  5. Finish and Serve: Remove the pan from heat. Sprinkle the fresh chipped parsley over the top for a burst of color and fresh flavor. Serve immediately as a savory side dish or appetizer.

Notes

  • Be sure to dry mushrooms properly to avoid excess water which can dilute the sauce.
  • You can substitute cremini mushrooms for white mushrooms for a deeper flavor.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Add a pinch of red pepper flakes for a bit of heat, if desired.
  • Serve with crusty bread or as a topping for steak or chicken.
