  • 1 lbs. Beef Chuck Roast, cut into thin strips
  • 1/2 cup Beef Broth
  • 1/2 cup Coconut Aminos
  • 1/4 cup Brown Sugar
  • 2 Tbsp Minced Garlic
  • 2 Tbsp Sesame Oil
  • 1 tsp Salt
  • 1 tsp Ground Ginger
  • 1/4 tsp Coarse Ground Black Pepper

Thickening and Vegetables

  • 2 Tbsp Cornstarch
  • 3 Tbsp Water
  • 12 ounce bag Frozen Broccoli

To Serve

  • Jasmine Rice, cooked (approximately 2 cups dry jasmine rice)

Instructions

  1. Combine Sauce Ingredients: In the bowl of your Crockpot, add beef broth, coconut aminos, brown sugar, minced garlic, sesame oil, salt, ground ginger, and black pepper. Stir thoroughly to blend all the flavors together evenly.
  2. Add Beef Strips: Lay the beef chuck roast strips evenly in the Crockpot over the prepared sauce, ensuring they are covered as much as possible by the liquid.
  3. Slow Cook the Beef: Cook on high heat for 1 to 2 hours or on low heat for 4 to 5 hours until the beef is tender but not falling apart.
  4. Prepare Thickening Mixture: About 30 minutes before the beef is done, combine cornstarch and water in a small bowl to create a slurry, which will thicken the sauce.
  5. Add Broccoli and Thicken Sauce: Pour the cornstarch slurry into the Crockpot and stir gently to incorporate it into the sauce. Add the frozen broccoli and mix carefully, then continue cooking until the beef is fully cooked and broccoli is tender (about 30 minutes more).
  6. Cook the Jasmine Rice: Prepare jasmine rice to serve alongside. For example, cook 2 cups jasmine rice with 2 1/2 cups water in an Instant Pot on manual high pressure for 3 minutes, then allow a natural pressure release.
