Instructions

  1. Infuse Butter: Melt the butter in a large saucepan over medium-low heat along with the red pepper flakes. Let it cook gently for about 5 minutes to infuse the butter with the spice, being careful not to let it burn.
  2. Prepare Butter for Bread: Carefully transfer the infused melted butter into a small bowl. Keep the pan for cooking the sandwich — do not wash it yet.
  3. Butter the Bread: Using a pastry brush or the back of a spoon, spread the infused butter on one side of both slices of bread. You may not use all the butter at this stage.
  4. Assemble the Sandwich: Heat the pan over medium heat. Place one slice of bread buttered-side down. Evenly sprinkle the crumbled goat cheese and shredded cheddar over this slice, then drizzle 1 tablespoon of honey on the cheese. Top with the second slice of bread, buttered side facing out, completing the sandwich.
  5. Cook the Sandwich: Cover the pan with a lid to help the cheeses melt evenly. Cook for 5-7 minutes until the bottom slice is toasted golden brown and the cheese inside is melted.
  6. Finish and Serve: Remove the sandwich from the pan and drizzle the top with the remaining tablespoon of honey. Optionally, sprinkle additional red pepper flakes from the pan over the sandwich for extra heat. Slice and enjoy immediately.
