Scale

Salad Ingredients

  • 4 pieces ripe peaches, halved and pitted
  • 1 cup fresh blueberries
  • 4 cups mixed greens (such as arugula, spinach, or spring mix)
  • 1/4 cup pecans or walnuts, toasted
  • 1/4 cup feta cheese, crumbled

Dressing Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Grill the peaches: Preheat your grill or grill pan to medium-high. Lightly brush the cut sides of the peaches with olive oil to prevent sticking. Place the peaches cut side down on the grill for 3 to 4 minutes until grill marks appear and the flesh softens slightly. Remove the peaches and slice each half into wedges for easy tossing.
  2. Prepare the dressing: In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, and a pinch of salt and pepper. Stir well until the dressing is emulsified and set aside for later use.
  3. Toast the nuts: While the peaches are grilling, toast the pecans or walnuts in a dry skillet over medium heat. Stir them frequently for 2 to 3 minutes until they become fragrant and lightly browned. Remove from heat and let cool.
  4. Assemble the salad: In a large salad bowl, add the mixed greens and gently toss them with the prepared dressing to lightly coat all leaves. Arrange the grilled peach wedges on top, scatter the fresh blueberries and toasted nuts evenly, then sprinkle the crumbled feta cheese over the salad.
  5. Finish and serve: Add a final sprinkle of salt and pepper to taste. Serve the salad immediately to enjoy the fresh, vibrant flavors in every bite.

Notes

  • Choose ripe but firm peaches for grilling to prevent them from becoming too mushy.
  • Use a non-stick grill pan if you do not have an outdoor grill.
  • For a vegan option, substitute the feta cheese with a plant-based alternative or omit it completely.
  • To enhance flavor, let the salad sit for 5 minutes before serving, allowing the dressing to meld with the ingredients.
  • Toast nuts carefully to avoid burning and bitterness.
