Ingredients

Scale

For the Steak Marinade

  • 1 pound flank steak
  • ¼ cup olive oil
  • 23 garlic cloves, minced
  • 2 teaspoons dried oregano
  • ½ teaspoon red chili flakes (to taste)
  • 1 teaspoon kosher sea salt
  • ¼ teaspoon ground black pepper

For the Pineapple Salsa

  • 2 cups fresh pineapple, diced
  • 1 small red bell pepper, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño, deseeded and chopped
  • 1 lime, juiced
  • Kosher sea salt, to taste
  • Black pepper, to taste

Instructions

  1. Marinate the Steak: Place the flank steak in a large Ziploc bag and add olive oil, minced garlic, dried oregano, red chili flakes, kosher sea salt, and ground black pepper. Seal the bag and massage the marinade into the steak thoroughly. Refrigerate for 1 hour to allow flavors to penetrate.
  2. Prepare the Pineapple Salsa: While the steak marinates, combine diced fresh pineapple, chopped red bell pepper, chopped cilantro, and deseeded jalapeño in a mixing bowl. Add fresh lime juice and season with kosher salt and black pepper to taste. Mix well and refrigerate until ready to serve.
  3. Bring Steak to Room Temperature: Remove the steak from the refrigerator about 15 minutes before grilling to let it come to room temperature. This step ensures more even cooking.
  4. Preheat the Grill: Heat your outdoor grill or a grill pan over medium-high heat until hot and ready for cooking.
  5. Grill the Steak: Place the steak on the hot grill and cook for 1 to 2 minutes per side, depending on your preferred level of doneness. For medium rare, aim for about 135°F internal temperature.
  6. Rest and Slice the Steak: Remove the steak from the grill and let it rest for 5 minutes to allow juices to redistribute. Slice thinly against the grain for maximum tenderness.
  7. Serve: Plate the sliced steak and generously spoon the pineapple salsa over or alongside the steak. Enjoy a vibrant, flavorful meal!

Notes

  • If you prefer a milder salsa, reduce or omit the jalapeño.
  • The steak can be marinated for up to 2 hours for increased flavor absorption but avoid longer to prevent texture changes.
  • Use fresh pineapple for the best sweetness and texture; canned pineapple is not recommended.
  • If using grill pan indoors, ensure proper ventilation to manage smoke.
  • Adjust chili flakes in the marinade according to your heat preference.
  • Letting the steak rest after grilling is crucial to maintain juiciness.
