Ingredients

Scale

Ground Turkey Mixture

  • 1 lb ground turkey
  • 1 Tbsp sesame oil (or favorite cooking oil)
  • 23 garlic cloves (minced)
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp soy sauce (low sodium)
  • 12 Tbsp sriracha
  • 23 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt (more or less to taste)
  • 2 tsp corn starch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½1 Tbsp sriracha (adjust to taste)
  • 1 tsp rice vinegar
  • 2 tsp honey

To Assemble

  • Cooked rice
  • Shredded carrots
  • Sliced cucumbers
  • Shelled edamame
  • Pickled onions
  • Avocado
  • Shredded cabbage
  • Sliced green onion
  • Sesame seeds

Instructions

  1. Prep Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey. Whisk well to create a smooth sauce. Adjust the flavor by adding more sriracha for extra spiciness or more honey/sweet chili sauce for sweetness. Chill the sauce until ready to serve.
  2. Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat until shimmering. Add ground turkey, breaking it into small pieces with a spatula. Cook until browned and the internal temperature reaches 165°F, then reduce heat to medium-low.
  3. Add Flavorings and Simmer: Stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Simmer the mixture for 2-3 minutes, stirring occasionally to meld the flavors.
  4. Thicken Mixture: Sprinkle the cornstarch evenly over the turkey mixture and stir well to combine, allowing it to thicken quickly. Optionally, stir in 2 tablespoons of the prepared bang bang sauce into the turkey for extra flavor just before serving.
  5. Assemble Rice Bowls: Spoon cooked rice into bowls. Top with the ground turkey mixture followed by your choice of shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado, shredded cabbage, and sliced green onions. Drizzle generously with bang bang sauce and garnish with sesame seeds for added texture and flavor.

Notes

  • The bang bang sauce can be adjusted for spiciness or sweetness to suit your preference.
  • Use low sodium soy sauce to control the saltiness of the dish.
  • Use fresh garlic and ginger for optimal flavor.
  • Ground turkey should reach an internal temperature of 165°F to be safely cooked.
  • Feel free to add or substitute any fresh vegetables you like to customize your rice bowl.
  • Leftover turkey mixture can be stored in an airtight container in the refrigerator for up to 3 days.
