  • 1 tbsp olive oil
  • 1 tsp garlic powder

  • 2 medium sweet potatoes, peeled and chopped
  • 2 small zucchini, sliced and quartered

Other Ingredients

  • 2/3 cup shredded parmesan cheese
  • 5 tbsp olive oil, divided
  • 1 1/2 tsp garlic powder, divided
  • 1 tsp rosemary, divided
  • Salt & pepper to taste

Instructions

  1. Preheat Oven: Set the oven to 400 degrees Fahrenheit to prepare for roasting the sweet potatoes.
  2. Prepare Sweet Potatoes: Peel and chop the sweet potatoes into bite-sized pieces. Place them in a large baking dish and toss with 2 tablespoons of olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper to evenly coat.
  3. Bake Sweet Potatoes: Put the baking dish in the oven and roast the sweet potatoes for 30 minutes until they are tender and slightly caramelized.
  4. Cook Ground Turkey: While the sweet potatoes bake, heat 1 tablespoon of olive oil in a pan over medium heat. Add the ground turkey along with 1 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper. Cook and stir until the turkey is browned and cooked through.
  5. Prepare Zucchini: Slice the zucchini into thin rounds, then quarter each slice to create bite-sized pieces.
  6. Combine Ingredients: Remove the sweet potatoes from the oven. Add the cooked ground turkey and chopped zucchini into the baking dish and mix everything together evenly.
  7. Second Bake: Return the dish to the oven and bake for an additional 10 minutes to allow the zucchini to soften and flavors to meld.
  8. Add Olive Oil and Cheese: Take the dish out again, drizzle with the remaining 2 tablespoons of olive oil, mix evenly, then sprinkle the shredded parmesan cheese on top.
