Ingredients

Scale

For the Greek Salsa

  • ½ cucumber, diced
  • ¼ red onion, diced
  • ¼ cup kalamata olives, sliced
  • Salt and pepper to taste
  • Juice of half a lemon
  • 2 tsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped

For the Tzatziki

  • 1 cup coconut yogurt (such as Culina)
  • 3 tbsp cucumber, diced
  • 2 tsp fresh dill
  • 1 tsp garlic powder
  • Pinch of salt
  • Juice of ¼ lemon

For the Chicken Bowls

  • 2 tsp olive oil
  • 1 lb ground chicken
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dill
  • 1 tbsp parsley
  • Juice of ½ lemon
  • Salt and pepper to taste (omit pepper for AIP)
  • Rice or cauliflower rice to serve

Instructions

  1. Prepare the Greek Salsa: Combine the diced cucumber, red onion, kalamata olives, salt, pepper, lemon juice, fresh dill, and fresh parsley in a bowl. Toss well to combine and set aside in the refrigerator to chill while preparing other components.
  2. Make the Tzatziki: In a separate bowl, mix the coconut yogurt with diced cucumber, fresh dill, garlic powder, salt, and lemon juice. Stir until fully combined and refrigerate to chill.
  3. Cook the Chicken: Heat olive oil in a pan over medium heat. Add the ground chicken and crumble it as it cooks. Season with garlic powder, onion powder, dried oregano, dill, parsley, salt, pepper (if using), and lemon juice. Stir thoroughly to incorporate all seasonings, cooking until the chicken is fully cooked and no longer pink.
  4. Assemble the Bowls: Divide rice or cauliflower rice evenly among four bowls. Top each bowl with the cooked ground chicken, followed by generous spoonfuls of the chilled Greek salsa and the creamy tzatziki. Serve immediately while fresh and enjoy!

Notes

  • For an AIP (Autoimmune Protocol) friendly version, omit pepper from seasoning.
  • You can substitute cauliflower rice for regular rice to reduce carbs and increase vegetable intake.
  • Make sure to use coconut yogurt without added sugars for the tzatziki to keep it healthy.
  • Fresh herbs enhance the flavor; avoid dried if possible when making salsa and tzatziki.
  • Leftovers can be stored refrigerated for up to 2 days but are best enjoyed fresh.
