Ingredients

Scale

Beef and Gravy

  • 2 lbs beef chuck roast, trimmed
  • 1 large onion, sliced
  • 2 cups beef broth
  • 1 packet brown gravy mix (about 1 oz)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)

To Serve

  • 3 cups mashed potatoes, prepared

Instructions

  1. Season the beef: Generously season the beef chuck roast with salt, black pepper, and garlic powder, ensuring all sides are evenly coated for maximum flavor.
  2. Prepare slow cooker: Place the sliced onions evenly in the bottom of the slow cooker, then carefully lay the seasoned beef roast on top of the onions.
  3. Make gravy mixture: In a bowl, whisk together the beef broth, brown gravy mix, and Worcestershire sauce until smooth. Pour this mixture evenly over the beef in the slow cooker.
  4. Slow cook: Cover the slow cooker with its lid and cook on low heat for 8 hours, or until the beef becomes tender enough to shred easily with a fork.
  5. Optional gravy thickening: If desired, remove the beef from the slow cooker and mix a cornstarch slurry (cornstarch mixed with a small amount of cold water) into the cooking liquid. Stir well and cook a few minutes until the gravy thickens.
  6. Shred and combine: Shred the cooked beef using two forks, then return the shredded meat to the thickened gravy and stir to combine.
  7. Serve: On each plate, place a generous scoop of prepared mashed potatoes, top with the shredded beef, and ladle over plenty of rich, flavorful gravy. Enjoy warm.

Notes

  • For best results, use fresh, high-quality beef chuck roast trimmed of excess fat.
  • If you prefer a smoother gravy, strain the cooking liquid before thickening with cornstarch.
  • This dish can be prepared ahead of time and refrigerated; reheat gently before serving.
  • Mashed potatoes can be homemade or store-bought to save time.
  • Adjust seasoning to taste, especially salt and pepper, depending on your preference.
