Ingredients

Scale

For the Muffins:

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 2 tbsp maple syrup

For the Filling:

  • 6 sausage patties, cooked and flattened
  • 6 eggs, scrambled or fried
  • 6 slices American cheese

Optional Add-ins:

  • Sharp cheddar cheese for stronger flavor
  • Turkey sausage for a lighter option
  • Drizzle of hot honey for a sweet-spicy twist

Instructions

  1. Preheat and prepare muffin tin: Preheat your oven to 350°F (175°C) and grease a muffin tin to prevent sticking.
  2. Mix dry ingredients: In a large bowl, whisk together all-purpose flour, sugar, baking powder, and salt ensuring they are well combined.
  3. Combine wet ingredients: Add milk, egg, melted butter, and maple syrup to the dry ingredients. Stir gently until just combined, being careful not to overmix to keep the muffins tender.
  4. Cook sausage patties: In a skillet, cook the sausage patties until browned on both sides. Drain excess grease and flatten slightly to fit muffin size.
  5. Prepare eggs: Scramble or fry the eggs according to your preference to serve in the muffins.
  6. Assemble muffins: Spoon a layer of muffin batter into each greased muffin cup to cover the bottom.
  7. Add filling layers: Place one cooked sausage patty, a portion of scrambled or fried egg, and half a slice of American cheese on top of the batter in each muffin cup.
  8. Cover with batter: Top the filling with remaining muffin batter, filling the cups almost to the top.
  9. Bake: Bake in the preheated oven for 18–20 minutes until muffins are golden brown and puffed up.
  10. Cool and serve: Allow the muffins to cool slightly in the tin before removing and serving warm.

Notes

  • You can substitute turkey sausage for a leaner option or add sharp cheddar cheese for extra flavor.
  • A drizzle of hot honey adds a delightful sweet and spicy twist if desired.
  • Do not overmix the batter to ensure light, fluffy muffins.
  • Cook sausage and eggs thoroughly before assembling.
  • Allow muffins to cool slightly before removing from tin to keep their shape intact.
