  • 1 lb halibut fillets (about 1-inch thick)

For the Garlic Parmesan Topping:

  • 1/2 cup mayonnaise (Hellmann’s recommended)
  • 1/2 cup grated parmesan cheese
  • 6 roasted garlic cloves (mashed into a paste)

Instructions

  1. Roast the Garlic: Preheat the oven to 375˚F. Cut off the top of the garlic head and brush away some of the outer skin, keeping the cloves intact. Place it on foil, drizzle with olive oil, then wrap tightly. Roast for 45 minutes until soft and caramelized, which brings out mellow, sweet garlic flavor.
  2. Prepare and Cook the Halibut: Increase the oven temperature to 425˚F. In an oven-proof pan, melt butter over low heat. Season halibut fillets on both sides with kosher salt and freshly ground black pepper. Add the fish to the pan and transfer to the oven. Roast for about 10 minutes, until the fish is opaque and just cooked through.
  3. Make the Garlic-Parmesan Topping: While the fish cooks, blend the six roasted garlic cloves with mayonnaise and grated parmesan cheese until smooth and creamy, creating a rich, flavorful topping.
  4. Broil the Halibut with Topping: Remove the pan from the oven once the fish is done roasting. Spread the garlic-parmesan mixture generously over the top of each fillet. Set the oven to high broil and return the pan to the oven for about 4 minutes, until the topping is golden brown and lightly crisp.
