This Layered Burrito Casserole is a hearty and delicious Tex-Mex dish that combines seasoned ground beef, refried beans, black beans, corn, salsa, and melted cheddar cheese layered between flour tortillas and baked to bubbly perfection. It’s a comforting one-dish meal perfect for family dinners or casual gatherings, with fresh cilantro adding a bright finishing touch.

Ingredients

Scale

Meat and Seasoning

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/4 cup water

Bean and Vegetable Mixture

  • 1 can (15 oz) refried beans
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn, thawed

Other Ingredients

  • 1 cup salsa
  • 6 large flour tortillas
  • 2 cups shredded cheddar cheese
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Brown the Ground Beef: In a skillet over medium heat, cook the ground beef thoroughly until browned. Drain any excess fat for a leaner casserole base.
  3. Season the Beef: Stir in the taco seasoning packet along with 1/4 cup of water, then simmer the mixture until it thickens and the flavors meld.
  4. Mix Beans and Corn: In a medium bowl, combine the refried beans, drained black beans, and thawed corn evenly to create the bean mixture.
  5. Assemble the Layers: Place two flour tortillas flat in the bottom of the prepared baking dish. Spread one third of the bean mixture over the tortillas, followed by one third of the cooked beef, a few spoonfuls of salsa, and a layer of shredded cheddar cheese.
  6. Repeat Layers: Repeat the layering process two more times—tortillas, bean mix, beef, salsa, cheese—finishing with a top layer of cheese to create a rich, melty crust.
  7. Bake Covered: Cover the casserole dish with foil and bake in the preheated oven for 20 minutes to heat through and allow flavors to combine.
  8. Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes or until the cheese on top is bubbly and golden brown.
  9. Cool and Garnish: Let the casserole cool slightly before serving. Garnish with fresh cilantro leaves if desired for a fresh finish.

Notes

  • For a spicier flavor, add chopped jalapeños or hot sauce to the meat mixture.
  • Use corn tortillas instead of flour for a gluten-free version, although texture will vary.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • To make it vegetarian, substitute the ground beef with cooked lentils or a plant-based meat alternative.
  • Adding diced bell peppers or onions to the meat mixture boosts flavor and nutrition.
