Ingredients

Scale

Shrimp and Seasoning

  • lbs shrimp, peeled, deveined, and rinsed
  • ½ tsp salt
  • ½ tsp paprika
  • ½ tsp Italian herb blend

Sauce and Cooking

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 5 cloves garlic, minced
  • ½ cup white wine
  • 5 oz sun-dried tomatoes, drained and sliced
  • 1⅓ cups half and half
  • Salt and pepper, to taste
  • ½ cup grated parmesan cheese
  • 1 large handful baby spinach

Instructions

  1. Season Shrimp: Pat dry the shrimp using paper towels, then evenly season them with salt, paprika, and the Italian herb blend to prepare for cooking.
  2. Cook Shrimp: Heat butter and olive oil in a large skillet over medium-high heat. Once hot, add the seasoned shrimp and cook for 1-2 minutes on each side until they turn opaque and lightly browned. Remove the shrimp from the skillet and set aside on a plate.
  3. Sauté Aromatics: Using the same skillet, add diced onion and sauté on medium heat for 3-4 minutes until softened. If the pan seems dry, add a small drizzle of oil. Stir in minced garlic and cook for 30 seconds to release its aroma.
  4. Build Sauce: Pour in the white wine and add the sliced sun-dried tomatoes. Sauté for 1 minute to reduce the wine slightly and combine flavors.
  5. Add Cream and Cheese: Stir in the half and half, season with salt and pepper, then add grated parmesan cheese. Bring the mixture to a simmer while stirring for a few minutes until the sauce thickens.
  6. Combine and Finish: Remove the pan from heat. Add the baby spinach and cooked shrimp back into the skillet, stirring gently to coat the shrimp in the creamy sauce and to wilt the spinach.

Notes

  • Use fresh shrimp for best flavor and texture, but frozen shrimp thawed thoroughly will work as well.
  • Adjust the seasoning to taste, especially salt and pepper, based on your preferences.
  • This sauce pairs beautifully with pasta, rice, or crusty bread to soak up the creamy garlic goodness.
  • For a richer sauce, you can substitute the half and half with heavy cream.
  • Make sure not to overcook the shrimp to keep them tender and juicy.
