Marshmallow Mixture

Instructions

  1. Prepare the Bain-Marie: Pour ½ cup of water into a small pot and bring it to a boil. Once boiling, place a large heatproof bowl over the pot, ensuring the bottom of the bowl does not touch the water.
  2. Melt butter and marshmallows: Add the unsalted butter and marshmallows into the heatproof bowl. Continually whisk the mixture until it melts down into a smooth, slightly thick paste. This should take about 2 to 4 minutes, and it’s important to keep whisking to prevent burning.
  3. Add salt and food colouring: Carefully remove the bowl from the heat using oven mitts or a tea towel. Stir in ½ teaspoon of salt and add a drop or more of red food coloring. Whisk thoroughly to combine and achieve an even color.
  4. Mix with Rice Bubbles: Put the Rice Bubbles into a large mixing bowl. Immediately pour the marshmallow mixture over the Rice Bubbles and mix quickly but gently to thoroughly coat all the cereal pieces with the sticky mixture.
  5. Shape the brains: Lightly oil your hands to prevent sticking. Shape the coated Rice Bubbles into oval brain shapes. Then, using a butter knife, carefully make a dent running through the middle of each oval to mimic the brain’s folds.
  6. Add vein details: Dip a toothpick into the red food coloring and use it to draw thin, vein-like lines on the surface of each brain-shaped treat for a spooky, realistic effect.
  7. Store: Place the finished brains in an airtight container to keep fresh. They can be stored for up to one week at room temperature.
