Sweet Potatoes
- 3 pounds sweet potatoes (5 to 6 medium or 4 large sweet potatoes)
Dairy
- 6 tablespoons butter
- 2 cups whole milk (or half and half, or plant milk of your choice)
Seasonings
- 1 1/2 teaspoons kosher salt (adjust if using salted butter)
- 1/2 teaspoon freshly ground black pepper
Garnish
- Dried or fresh parsley for topping
- Boil: Fill a large pot with water and bring it to a boil over high heat.
- Prep: Scrub the sweet potatoes thoroughly and peel them using a vegetable peeler. Discard the skins.
- Cook: Chop the peeled sweet potatoes into small chunks and add them to the boiling water. Cook for 25-30 minutes until the potatoes are tender and easily pierced with a fork.
- Drain: Pour the cooked potatoes into a colander set in the sink to drain all the water.
- Mash: Transfer the drained sweet potatoes to a large mixing bowl and mash them using a hand masher or electric beater until smooth and lump-free.
- Season: Add the butter and milk to the mashed sweet potatoes. Stir thoroughly until the mixture is creamy and well combined. Season with kosher salt and freshly ground black pepper to taste.
- Serve: Spoon the mashed sweet potatoes onto a serving dish, sprinkle with dried or fresh parsley, and serve warm.
