Instructions

  1. Cream Butter and Sugar: In a large bowl, cream together the unsalted butter and icing sugar until the mixture is smooth and fluffy, creating a light base for the cookie dough.
  2. Add Egg: Beat in the large egg thoroughly to incorporate moisture and help bind the dough.
  3. Mix Dry Ingredients: Sift together the plain flour, cornflour, and a pinch of salt, then gradually add to the butter mixture. Mix thoroughly until a dough forms.
  4. Divide Dough: Weigh the dough and divide it evenly into three portions for distinct flavors.
  5. Flavor Each Dough Portion: Add vanilla essence to the first portion and knead in. For the second portion, add raspberry essence and pink food colouring, kneading until evenly tinted pink. To the third portion, mix in the melted dark chocolate and cocoa powder; knead well despite the dough being sticky, using flour on your work surface to manage stickiness.
  6. Form Dough Balls: Pinch off the dough from each flavored portion into grape-sized balls (about 7g each) and roll them smooth.
  7. Create Swirl Shapes: Take two dough balls of each color and alternate them to form a flower shape. Pinch dough together at the center to close the gaps, then gently roll the dough into a stocky cylinder.
  8. Swirl the Dough: Place the cylinder on the countertop and, using a cupped hand, rotate it in circular motions. Turn it over frequently to swirl the colors into a spiral pattern on the bottom of the dough. If dough segments begin to separate, pinch them carefully to keep the shape intact.
  9. Chill the Cookies: Arrange the swirled cylinders, swirl side up, on a lined baking tray. Refrigerate for 15 minutes to firm them up.
  10. Preheat Oven & Bake: Meanwhile, preheat your oven to 160°C (fan). Bake the cookies for 12-15 minutes until cooked through but still tender.
