Ingredients

Scale

Steak & Butter

  • 1 lb steak (sirloin or ribeye), cut into bite-sized pieces
  • 2 tablespoons butter (divided)

Sauce & Seasoning

  • 4 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (adjust to taste)
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Salt and black pepper, to taste

Pasta & Liquid

  • 8 oz rotini pasta (or any short pasta)
  • 2.53 cups water or broth

Garnish

  • Chopped parsley, for garnish (optional)

Instructions

  1. Sear the Steak: Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add the steak pieces, season with salt and pepper, and sear them for 2–3 minutes per side until nicely browned. Remove the steak from the skillet and set aside.
  2. Sauté Garlic and Pepper Flakes: Using the same skillet, add the remaining tablespoon of butter. Stir in the minced garlic and crushed red pepper flakes. Cook for 1–2 minutes until the garlic is fragrant but not burnt.
  3. Prepare the Cream Sauce: Pour in the heavy cream and stir to combine with the garlic mixture. Allow it to simmer gently for 3–4 minutes to thicken slightly.
  4. Incorporate Parmesan: Stir in the grated parmesan cheese, continuing to stir until it melts fully into the creamy sauce, creating a smooth texture.
  5. Cook the Pasta: Add the uncooked rotini pasta and 2.5 to 3 cups of water or broth to the skillet. Bring the mixture to a boil, then reduce the heat and cover the skillet. Let it simmer gently for 10–12 minutes, stirring occasionally to prevent sticking, until the pasta is al dente and the sauce thickens.
  6. Combine Steak and Pasta: Once the pasta is cooked, return the previously seared steak pieces along with their juices to the skillet. Stir well to coat everything evenly in the creamy sauce.
  7. Adjust Seasoning and Garnish: Taste the dish and adjust salt and pepper as needed. Garnish with chopped parsley and additional parmesan cheese if desired.
  8. Serve Hot: Serve the creamy, spicy garlic butter steak and pasta immediately while warm for the best flavor and texture.

Notes

  • Use ribeye or sirloin steak for the best flavor and tenderness.
  • Adjust the amount of crushed red pepper flakes according to your spice preference.
  • Using broth instead of water adds extra depth of flavor.
  • Stir occasionally while simmering pasta to prevent sticking to the skillet.
  • Optional garnish of parsley adds freshness and color to the dish.
