4.9 from 118 reviews

A delightful twist on classic tiramisu, this Raffaello Coconut Tiramisu combines the rich creaminess of mascarpone and coconut cream with the bold flavor of espresso-soaked ladyfingers. Topped with toasted coconut flakes and a dusting of cocoa powder, it offers a tropical, indulgent dessert perfect for any occasion.

Ingredients

Scale

Coffee Mixture

  • 1 cup strong brewed espresso or coffee (cooled)
  • ¼ cup granulated sugar

Mascarpone Filling

  • 1 cup mascarpone cheese
  • ½ cup coconut cream (unsweetened)
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract

Assembly

  • 24 ladyfingers
  • ½ cup toasted coconut flakes (for garnish)
  • 2 tbsp cocoa powder (for dusting)

Instructions

  1. Prepare Coffee Mixture: Brew the espresso or strong coffee and while it is still hot, stir in ¼ cup granulated sugar until fully dissolved. Allow the coffee mixture to cool to room temperature.
  2. Make Mascarpone Cream: In a mixing bowl, combine the mascarpone cheese, coconut cream, ¼ cup granulated sugar, and vanilla extract. Mix thoroughly until the mixture is smooth, creamy, and well-blended.
  3. Soak Ladyfingers: Quickly dip each ladyfinger into the cooled coffee mixture, ensuring they are soaked but not overly saturated to prevent sogginess.
  4. Layer the Tiramisu: In a serving dish, arrange a layer of the soaked ladyfingers. Spread a layer of the mascarpone coconut cream over them. Repeat these layers at least three times or until all ingredients are used, finishing with a layer of the mascarpone cream on top.
  5. Garnish and Chill: Dust the top layer with cocoa powder and generously sprinkle toasted coconut flakes. Cover and refrigerate the tiramisu overnight to allow flavors to meld and the dessert to set properly.

Notes

  • Ensure the coffee or espresso is cooled before dipping ladyfingers to avoid them becoming too soggy.
  • Use unsweetened coconut cream for a balanced flavor; sweetened versions can make the dessert overly sweet.
  • To toast coconut flakes, heat them in a dry skillet over medium heat until golden brown, stirring frequently to prevent burning.
  • Refrigerating overnight enhances the melding of flavors and improves texture.
  • This dessert can be prepared a day ahead, making it a great make-ahead option for gatherings.
