These Raspberry Coconut Magic Bars are a delightful layered treat featuring a buttery graham cracker crust, tangy raspberry preserves, sweetened condensed milk, flaky coconut, nuts, and a blend of chocolate chips. Baked to golden perfection, they offer a perfect balance of sweet and tart flavors with a rich, chewy texture.

Ingredients

Scale

Crust

  • 1 and 2/3 cups graham cracker crumbs
  • 1/2 cup butter (1 stick), melted
  • 2 tablespoons sugar

Layers and Toppings

  • 3 cups sweetened, flaked coconut
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup seedless raspberry preserves
  • 1/2 cup chopped pecans
  • 1/2 cup semisweet chocolate chips
  • 1/3 cup white baking chips
  • 1 teaspoon shortening

Instructions

  1. Prepare the Base: In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press this mixture firmly and evenly into a lined 9×13 inch baking pan to form the crust.
  2. Spread Raspberry Layer: Evenly spread the seedless raspberry preserves over the graham cracker crust, making sure to cover all edges for a uniform layer of flavor.
  3. Pour Condensed Milk: Slowly pour the sweetened condensed milk over the raspberry preserves, gently swirling to ensure even coverage across the entire layer.
  4. Add Coconut and Nuts: Sprinkle the flaked coconut and chopped pecans evenly on top, gently pressing down to help them stick to the condensed milk layer.
  5. Top with Chocolate Chips: Scatter semisweet chocolate chips and white baking chips on top of the coconut and pecans. Reserve a few white chips for garnish if desired.
  6. Bake Until Golden: Preheat your oven to 350°F (175°C) and bake the bars for 25 to 30 minutes until the top is golden brown and the bars smell fragrant and toasty.
  7. Cool Completely: Remove the pan from the oven and allow the bars to cool completely in the pan. This helps the layers set properly and makes slicing easier.

Notes

  • Press the crust mixture firmly to avoid crumbly edges.
  • Use seedless raspberry preserves to prevent chunks of seeds in the layer.
  • Keep an eye during baking to prevent over-browning, especially on the coconut topping.
  • These bars can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • Allow bars to cool fully before cutting to maintain clean slices.
