  • 12 oz cherry tomatoes, halved
  • 1 tbsp fresh rosemary, chopped
  • 1/4 cup olive oil (divided: 2 tbsp for roasting, 1/4 cup total separated)
  • Salt & pepper, to taste

For the Pasta

  • 8 oz spaghettini or thin spaghetti
  • 1/4 cup fresh basil, packed and chopped

Instructions

  1. Prepare Garlic Parmesan Bread Crumbs: Place a pan over medium heat and add 1/2 teaspoon olive oil. Add bread crumbs, vegan parmesan, and garlic powder. Sauté, stirring frequently, until the mixture is browned and crispy. Remove from heat and set aside.
  2. Roast Garlic and Tomatoes: Preheat oven to 400°F (200°C). Line a baking sheet with foil. Spread garlic cloves, halved cherry tomatoes, chopped rosemary, and 2 tablespoons olive oil evenly on the sheet. Season with salt and pepper. Roast for 10-12 minutes until tomatoes blister and garlic softens.
  3. Cook Pasta: Bring a large pot of salted water to a boil. Add spaghettini and cook for 8-10 minutes until al dente. Drain pasta, reserving 1 cup of pasta water.
  4. Combine Ingredients: Return pasta pot to low heat and add remaining 2 tablespoons olive oil. Add cooked pasta, roasted garlic and tomato mixture, and fresh basil. Toss to combine thoroughly.
  5. Adjust Sauce Consistency: Gradually add reserved pasta water, 1/4 cup at a time, stirring until the sauce reaches your preferred consistency. Taste and adjust salt and pepper as needed.
